Fromasa®2200 TL granulate is acid protease, manufactured from a selected strain of Rhizomucor miehei. Fromasa®2200 TL granulate causes the process of coagulation of milk by hydrolytic cleavage of the bond 105-106 (phenylalanine – methionine) in kappa-casein.
Area of application
It is used in the dairy industry in the production of cheeses, cottage cheese, and cottage cheese products.
Dosage
Cheese:12-15 g for 1,000 kg of milk mixture. The dosage is selected individually during the year, proceeding from the following condition: to complete the coagulation of protein within (35+5) minutes. The dosage may vary depending on the region, time of the year, and quality indicators of the raw milk.
Curd cheese: 0.4-0.5 g for 1,000 kg of milk mixture.
Technological recommendations
1. Prepare an aqueous solution of the formulation having the desired activity (use sterile and chlorine-free water, with a temperature of 30-35 ºC). Use labware (a vessel and mixing spatula) of a polymeric material or stainless steel;
2. Mix the solution thoroughly;
3. Keep the solution for some time to allow the enzyme swell;
4. The enzyme solution should be introduced into the milk mixture, while distributing it over the whole surface of the cheesemaker bath and stirring the milk mixture at a high speed.
